No Bake Pumpkin Butterscotch Pie
 


Ingredients:
1 reduced fat graham cracker shell or try my Super Healthy Banana-Graham Crust recipe found here 
1 pkg Sugar-free instant butterscotch pudding mix
3/4 cup skim milk
1 cup cool whip
1  cup canned pumpkin
1-2 Tbsp splenda or Truvia
tsp vanilla
1/2 Tbsp pumpkin pie spice
3/4 tsp cinnamon

Directions:
  In a small bowl, mix pudding mix and milk; stir in pumpkin, sugar substitute, vanilla, pumpkin pie spice and cinnamon; when combined, fold in cool whip. Spoon evenly into your pie shell and freeze for 2 hours (no more).  If longer than 2 hours, move pie to refrigerator.  I suggest serving with a drizzle of caramel and a dollop of whipped cream : )
