Pistachio Angel Food Cake

Pistachio Angel Food Cake
 
 
 
 

Ingredients for Cake:
1 box angel food cake
1 1/2 cups water
1 egg white
Small box sugar free pistachio pudding

Ingredients for Frosting:
1 small can crushed pineapple (undrained)
Small box sugar free pistachio pudding
12 oz carton lite cool whip

Directions:
Blend cake mix, water, egg white and pudding mix until fluffy and well combined.  Bake as directed on box.  After baking, turn cake pan upside down on a plate or rack and let cool completely.  After completely cooled, gently run knife around edges to loosen and turn out on serving plate.  In a medium bowl, mix pudding mix and pineapple with juice.  Fold in cool whip.  Frost cake lightly and garnish with chopped pecans and a cherry.  Keep refrigerated until ready to serve.
