Spinach Stuffed Chicken Breasts
(serves 4)
 
4 chicken breasts
1 pkg frozen chopped spinach (thawed and drained)
4 oz softened cream cheese
1/2 cup shredded mozzarella
4 Tbsp panko bread crumbs
1/2 to 3/4 tsp Cajun seasoning
 
*Directions*
Preheat oven to 375 degrees.  Butterfly chicken breasts and flatten with mallet to about 1/2 in thickness.  In a small bowl, mix together spinach, cream cheese and mozzarella.  Place 1/4 of spinach filling in center of each of the four chicken breasts.  Roll tightly and secure with toothpicks (approximately 3-4 toothpicks per breast).  Place seam side down in a baking dish lightly sprayed with nonstick spray and lightly salt and pepper chicken.  In another small bowl, combine breadcrumbs and Cajun seasoning.  Sprinkle evenly over chicken breasts.  Lightly spray the tops of each chicken breast with nonstick spray and bake for 40-45 minutes.  Remove toothpicks before serving.
