Mexican Black Bean Brownies (flourless)

Mexican Black Bean Brownies
with "Chili Nut M&Ms
"Sweet Heat" and NO FLOUR

You won't believe how good these are!  And the best part is they actually have nutrition in them!  I have even included a low-sugar optional for you as well! The results were slightly different but both delicious!  The traditional white sugar variation makes more of a "chocolate cake-like" taste and texture which was the definitive kids' choice.  The low sugar option will give you a consistency and flavor of a semi-sweet, flourless chocolate cake which the adults preferred.  Either way, I think you'll be pleasantly surprised by the sweet and tasty outcome!

15 oz can black beans (rinsed and drained)
1 egg plus 2 egg whites
3 Tbsp nonfat greek yogurt
1/4 cup cocoa
pinch of salt
tsp vanilla extract
2/3 cup white sugar or (low sugar option) 1/4 cup white sugar + 1/2 cup stevia
tsp instant coffee
1/2 tsp baking powder
1/2 tsp baking soda
tsp cinnamon
1/4 tsp cayenne pepper

*optional mix-in*-I used 2/3 cup of "Chili Nut" M&Ms

1.) Preheat oven to 350 degrees and lightly spray an 8x8 pan
2.) Dump all ingredients (except for optional mix-in) into a blender and blend until completely smooth; stir in any optional mix-in
3.)  Pour brownie batter into sprayed dish and bake for approximately 25 minutes
