Roasted Red Pepper Hummus

Roasted Red Pepper Hummus
15 oz can of chickpeas (drained and rinsed)
2 Tablespoons fresh lemon juice
1/4 cup plain greek yogurt
2 cloves minced garlic
1/2 tsp salt
1/8 tsp cayenne pepper
1/2 tsp ground cumin
1 cup of jarred roasted red peppers (drained and packed in water, not oil)
*optional tablespoon of olive oil
Place all ingredients in a food processor, magic bullet or ninja and pulse until top ingredients have found their way to the bottom.  Blend until mixture is smooth but has texture.  Pour into a serving dish and serve with favorite crackers or pita chips.
