Taco Turkey Loaf with Honey Enchilada Glaze

Taco Turkey Loaf
1 lb lean ground turkey
1 cup low fat or fat free refried beans
1 egg white
1/4 cup crushed baked tortilla chips
1 can rotel (drained)
2 Tbsp low sodium taco seasoning
*optional shredded cheese*
For Honey Enchilada Glaze:
1 cup enchilada sauce
1/4 cup honey
1/4 cup stevia
Preheat oven to 375 degrees and lightly spray a loaf pan with nonstick spray.  Mix all ingredients in a medium bowl until well incorporated and transfer to loaf pan.  Pack to create a loaf shape and bake for 45 minutes to an hour.  During last 10 minutes, pour glaze mixture over meatloaf and finish baking.
