Healthy Pumpkin Bars

Healthy Pumpkin Bars

1/2 cup whole wheat flour
1 tsp cinnamon
1/4 tsp ground ginger
1/2 tsp baking powder
1/4 tsp salt
3 Tbsp brown sugar
2 Tbsp stevia
1/2 cup pumpkin
3 egg whites
2 Tbsp skim milk
2 Tbsp applesauce
1/2 tsp vanilla

Preheat oven to 350 degrees lightly spray an 8x8 pan.  In two separate bowls, mix the dry ingredients (flour through stevia) and the wet ingredients (pumpkin through vanilla).  Mix both bowls together just until combined and pour batter into pan.  Bake for 14-15 minutes or until a knife in the center comes out clean.  Let cool completely before cutting.
