Chickpea Blondie Bars

Chickpea Blondie Bars

15 oz can chickpeas (garbanzo beans) rinsed and drained
1/2 cup peanut butter
1/3 cup of honey
1 egg
2 tsp vanilla
1/4 tsp baking soda
1/3 cup chocolate chips

Preheat oven to 350 degrees and lightly spray an 8x8 pan.  Place all ingredients except for chocolate chips in a food processor or blender and blend until smooth.  Batter will be runny.  Stir in chocolate chips reserving a handful for garnish. Pour batter into pan, garnish with remaining chocolate chips and bake for 20-25 (mine took 22 minutes).  Let cool completely before cutting.
