Pulled Pork BBQ Pepper Nachos

Pulled Pork BBQ Pepper Nachos
 
 
 
Ingredients:
Fully cooked Pulled Pork in BBQ sauce (approximately 2 lbs or so)
1 bag mini sweet peppers
light shredded cheddar cheese
BBQ sauce
1 cup black beans (rinsed and drained)
chopped tomatoes
chopped green onion
chopped, fresh cilantro
fresh jalapenos (sliced and seeded)
dollop of nonfat plain greek yogurt
 
Directions:
1.)Preheat oven to 400 degrees and line a baking sheet with foil.
2.)Cut tops off all peppers, cut in half and discard seeds.
3.)Arrange peppers "Insides" facing up on pan, spoon approximately a teaspoon of BBQ  pulled pork into each cavity.
4.)Sprinkle with desired amount of cheese and all of black beans and bake for approximately 10-15 minutes in the oven or until cheese is melty.
5.)Top with additional ingredients and serve immediately.

  1. The hostess said to sit wherever I want, but the couple at this table are giving each other weird looks and have totally stopped talking.
