Chicken Teriyaki Stir Fry with Zoodle Lo Mein

Chicken Teriyaki Stir Fry
with Zoodle Lo Mein
 

Ingredients for sauce/marinade:

1/2 cup reduced sodium soy sauce
2 Tbsp brown sugar
2 Tbsp honey
3 Tbsp rice wine vinegar

1 tsp ground ginger

1 tsp minced garlic

1 Tbsp minced onion





Ingredients for Stir Fry:
 4 boneless, skinless chicken breasts cut into bite size chunks
1 yellow squash (spiraled using a zucchini spiraler like the "Veggetti" and sautéed for 4-5 minutes)
1 bag frozen stir fry veggies (steamed)
Green onions
Sesame seeds
 
 
 "Ooooodles of Zoodles"!
 
Directions:
1.)  Whisk sauce/marinade ingredients in a small bowl.  Place chicken pieces in a large ziplock baggie and pour marinade over chicken.  Seal and marinate in the fridge for at least 3 hours.
2.). Remove chicken from marinade bag using a slotted spoon but KEEP THE MARINADE!!! This will be your sauce.  Using a small amount of coconut or sesame oil, sautée chicken over medium-high heat for 5-7 minutes or until fully cooked.  Transfer to a separate dish and cover.
3.). In the same skillet, pour in your marinade mixture and bring to a full boil.  Cook at a rolling boil for 4-5 minutes stirring continuously.  Mixture will thicken and turn into a delicious teriyaki sauce.  
 4.). Once thickened, stir in your cooked chicken, steamed bag of veggies and sautéed zoodles until all is well coated.  Top with sliced green onions and sesame seeds.
