Maple Dijon Chicken

Maple Dijon Chicken
3-4 boneless skinless chicken breasts
1/2 cup Dijon mustard
1/4 cup maple syrup
1 Tbsp red wine vinegar
salt and pepper
1.)  Preheat oven to 400 degrees
2.)  Pat chicken dry with paper towel, generously salt and pepper and place in a lightly sprayed baking dish.
3.)  In a small bowl combine mustard, syrup and vinegar and pour over chicken breasts.
4.)  Bake uncovered 35-40 minutes.
