Old Fashioned Oatmeal Cookies
*Makes One Dozen Large Cookies*
Ingredients:
1 stick of room temperature butter (NOT MARGARINE)
3/4 cup packed brown sugar
1/2 cup white sugar
2 eggs (room temperature)
1 tsp good quality vanilla (NOT IMITATION)
1 1/2 cups AP flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups old-fashioned oats
Directions:
1.) Preheat oven to 350 degrees
2.) In a large bowl, whisk flour, baking soda, cinnamon and salt.
3.) In a medium bowl using a hand-mixer, cream together butter and sugars until light and fluffy. (This should take approximately 2 minutes. DO NOT OVER MIX or cookies will spread too much during baking process and not retain their shape. I like to set a timer so I don't get distracted.)
4.) Next, mix in eggs and vanilla just until combined.
5.) Using a wooden spoon, slowly stir in flour mixture and 3 cups of oats until fully combined.
6.) Chill dough in fridge for 30 minutes to and hour. (I put my dough in the freezer if I only have 30 minutes).
7.) While dough is chilling, line two baking sheets with parchment paper. After chilling process, remove from fridge and using an ice cream scoop, drop 6 scoops onto each parchment lined pan.
8.) Bake for 9-11 minutes (it was always 11 for me due to the size of the cookies) or until tops of cookies turn just golden. Enjoy!!!
Kennedy and I made these to sell at her "Cookies and Lemonade Stand". They were a HUGE hit but then again, it could have been my charming sales associate!!!
