Double Chocolate Spinach Muffins

Double Chocolate Spinach Muffins
 
Ingredients:
 
Wet:
1 banana
2 handfuls spinach
1/4 cup greek yogurt
1/4 cup applesauce
2-3 Tbsp milk
1 egg plus 1 egg white
1 tsp vanilla
 
Dry:
1 cup whole wheat flour
1 tsp baking powder
1/4 cup sugar plus 2 stevia packets
1/4 cup plus 1 Tbsp cocoa powder
1/3 cup chocolate chips
 
Directions:
1.)  Preheat oven to 350 degrees and line or spray muffin tins.
2.)  Place banana, spinach, yogurt, applesauce and milk in a blender or magic bullet and puree.  Pour into a medium bowl; add in eggs and vanilla. 
3.)  In another medium bowl, whisk all dry ingredients except for chocolate chips.  Carefully incorporate dry ingredients into wet being careful not to over-mix.  When combined, fold in chocolate chips.
4.)  Fill muffin tins 2/3 full with batter and bake for approximately 20 minutes.
