Sweet and Sour Turkey Meatballs
Ingredients:
Meatball Ingredients:
1 lb lean ground turkey
2 Tbsp dry onion soup mix
1/4 cup panko
1 egg white
1 tsp Worcestershire
1/2 tsp liquid smoke
1/2 tsp pepper
1 tsp Italian seasoning
Sauce Ingredients:
1 cup chicken stock
1/2 cup pineapple juice (reserved from can of pineapple chunks)
3 Tbsp apple cider vinegar
1 Tbsp low sodium soy sauce
1 Tbsp ketchup
1/4 cup packed, brown sugar
2 Tbsp cornstarch
dashed of red pepper flakes
Additional Ingredients:
20 oz can pineapple chunks
*optional* - approx. 2 cups chopped veggies ( I used peppers, zucchini and onion)
Sauce Ingredients:
1 cup chicken stock
1/2 cup pineapple juice (reserved from can of pineapple chunks)
3 Tbsp apple cider vinegar
1 Tbsp low sodium soy sauce
1 Tbsp ketchup
1/4 cup packed, brown sugar
2 Tbsp cornstarch
dashed of red pepper flakes
Additional Ingredients:
20 oz can pineapple chunks
*optional* - approx. 2 cups chopped veggies ( I used peppers, zucchini and onion)
Meatball Directions:
1.) Preheat oven to 400 degrees.
2.) Mix all ingredients in a medium bowl and with well-greased hands, form into balls.
3.) Place meatballs in a baking dish and bake for approximately 25-30 minutes.
For Sauce Directions:
1.) In a mixing bowl, combine all sauce ingredients and whisk well.
2.) Sautee veggies in a little olive oil over medium high heat. When veggies are barely tender, pour in sauce mixture and pineapple chunks and bring to a boil. When sauce thickens to preferred consistency, remove from heat and stir in cooked meatballs and a few dashes of red pepper flakes. Serve over brown rice.
