Triscuit Chicken

Triscuit Chicken
4-5 boneless, skinless chicken breasts
1/2 cup buttermilk (milk with 1/2 tsp vinegar added and allowed to set 5 min)
Tablespoon Dijon mustard
about 20 Triscuits
1/4 cup panko crumbs
1/2 tsp garlic powder
tsp paprika
1/2 tsp salt
dash of cayenne pepper
1.) In a small bowl, mix buttermilk and mustard for marinade.  Place chicken and marinade in a gallon baggie and marinate in the fridge for a few hours.
2.)Preheat oven to 375 degrees.
3.) Crush triscuits in a food processor of ninja blender and pour into a shallow dish.  Stir in panko and all remaining seasonings.
4.)  One at a time, remove chicken from marinade and dip in crumb mixture making sure to coat all sides.  Place in a lightly sprayed baking dish.  Repeat with all remaining chicken breasts. 
5.)  Pour last remaining crumbs over chicken and spritz with baking spray.
6.) Place chicken in the oven and bake for approximately 45 minutes or until chicken is fully cooked.
