Carrot Cake Energy Bites

Carrot Cake Energy Bites

Ingredients:
(makes about 20 bites)
1 cup old fashioned oats
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/2 cup natural peanut or almond butter
1/3 cup honey
1/2 tsp vanilla

1/4 cup chopped pecans
1/4 cup raisins ( I used a mixture of raisins and dates)

1/2 cup shredded carrots
Directions:
In a small bowl, mix oats, cinnamon, nutmeg and ginger. In a medium bowl, mix peanut butter and honey.  (You might need to warm it a tad in the microwave); when mixed, stir in vanilla.  Slowly pour oat mixture into peanut butter mixture.  Fold in pecans, carrots and raisins.  Chill mixture in refrigerator for an hour.  Using a cookie scoop or tablespoon, scoop spoonfuls and from into a ball using your hands.  (Will not work if you "roll" balls like cookie dough, you must "squeeze them into balls using your hands).  Keep refrigerated for freshness.
