Spinach Smothered Chicken

Spinach Smothered Chicken

4-5 boneless skinless chicken breasts
Cavendar's Greek seasoning
2 cups fresh spinach (approx)
1 cup chopped fresh mushrooms
1/2 onion (diced in large pieces)
2 cloves minced garlic
Salt and pepper
Shredded light cheese (mozzarella or Swiss is best)

1.). Preheat oven to 375 degrees
2.) Place chicken in a lightly sprayed baking dish and season both sides well with seasoning.
3.). Place in oven and bake for first 20 minutes.
4.). While chicken is baking, sautée mushroom and onion over medium high heat until mushrooms begin to golden and onions turn slightly translucent.
5.). Add in spinach and garlic and sautée until barely wilted. Remove from heat and sprinkle with salt and pepper.
6.). After 20 minutes of baking, remove chicken from oven and top each breast with spinach mixture followed by desired amount of shredded cheese.
7.) Return to oven to bake an additional 20 minutes. Enjoy!

And now, a bible verse to hold onto when YOU are feeling "smothered".  It was written by Paul who understands better than anyone what it feels like to be smothered with problem after problem after problem!  For more on his, read what he has to say in 2 Corinthians 4.

"We are hard-pressed on every side, yet not crushed; we are perplexed, but not in despair; persecuted, but not forsaken; struck down, but not destroyed." - 2 Corinthians 4:8-9
