S'more Cookies

S'more Cookies

3/4 cup butter (room temp)
1/4 cup sugar
3/4 cup brown sugar
1 egg plus 1 egg yolk (room temp)
tsp vanilla
1/2 cup graham cracker crumbs
tsp baking soda
2 cups flour
1 cup mini marshmallows (plus a handful for garnishing)
1 cup semisweet chocolate chips (plus a handful for garnishing)
1 box instant vanilla pudding ( I used sugar free)
Pack of 12 mini Hershey bars broken into pieces

1.)  Cream butter and sugars until light and fluffy.  One at a time, add in eggs, vanilla and dry pudding and mix until well incorporated.
2.). In a small bowl, whisk graham cracker crumbs, baking soda and flour.
3.). Slowly add dry ingredients to wet and mix until combined.  Fold in marshmallows and chocolate chips.
4.).  Cover and Refrigerate dough for at least 2 hours or overnight.

When ready to bake.......

1.) Preheat oven to 350 degrees.  Using a spoon or a cookie scoop, scoop out dough onto your cookie sheet and roll into balls.  Bake for approximately 9 minutes.
2.). As soon as cookies come out of the oven, gently press one piece of Hershey bar and 1-2 marshmallows onto the top of each cookie.
3.). Allow cookies to fully cool before removing from cookie sheet and enjoy!!
