Turkey Meatballs and Mushroom Gravy with Mashed "Faux-tatoes"

Turkey Meatballs and Mushroom Gravy
with Mashed "Faux-tatoes"
 
 
Meatball Ingredients:
1 lb lean ground turkey
2 Tbsp dry onion soup mix
1/4 cup panko
1 egg white
1 tsp Worcestershire
1/2 tsp liquid smoke
1/2 tsp pepper
1 tsp Italian seasoning
 
Meatball Directions:
1.) Preheat oven to 400 degrees.
2.)  Mix all ingredients in a medium bowl and form into balls.
3.)  Place meatballs in a baking dish and bake for approximately 30 minutes.
 
Sauce Ingredients:
1/2 cup onion (sliced and diced)
1/2 cup fresh mushrooms (sliced)
1 can reduced fat cream of mushroom soup
1/3 of a soup can of milk
1 Tbsp nonfat plain greek yogurt
 
Sauce Directions:
1.)  Sautee onions and mushroom until tender.
2.)  Add in can of soup, milk and yogurt.
3.)  Cook over medium heat until fully heated.
 
Mashed "Faux-tatoes" Ingredients:
2 medium bags frozen cauliflower
tsp minced garlic
tsp swanson chicken flavor boost
1/2 tsp pepper
1/2 tsp salt
 
Mashed "Faux-tatoes" Directions:
1.)  Boil cauliflower until completely tender; strain in a colander to remove ALL WATER and let cool. ( Cauliflower will turn "soupy" if you do not drain it well)
2.) Place cooled cauliflower in a blender or food processor (I like to do this in two increments, only blending half the cauliflower at a time)
3.) Pulse and blend until cauliflower is smooth but not liquefied which can happen VERY QUICKLY so watch mixture and move cauliflower around to blend evenly.
4.)  Repeat with 2nd half of cauliflower; place blended mixture in a pan; stir in all remaining ingredients and heat over medium low until fully heated.
