Sweet Potato Salad made with greek yogurt and honey

Sweet Potato Salad
 
 
Salad Ingredients:
1 large sweet potato (diced and boiled until tender but not mushy)
2 celery stalks (diced)
1/2 of a  green apple (diced)
1 cup red grapes
1/2 chopped pecans
1/4 cup diced red onion
Dressing:
6 oz container of nonfat vanilla greek yogurt
1/2 cup honey
1/8 tsp nutmeg
1/4 tsp cinnamon
*Optional - additional sweetener to taste*
 
Directions:
1.) Place salad ingredients in a medium bowl.
2.)  Mix dressing ingredients in a small bowl until fully combined
3.)  Pour dressing over salad and gently fold until all ingredients are fully coated
4.)  Refrigerate for 30 minutes to allow flavors to marry before serving....Enjoy!!!
