Pumpkin Protein Muffins


Ingredients:
1/2 cup canned pumpkin
1/4 cup applesauce
1/4 cup nonfat vanilla greek yogurt
2 Tbsp egg whites
3/4 cup oats 
1/2 scoop or 1/8 cup vanilla protein powder
1/2 cup stevia
1/2 tsp baking soda
1 tsp baking powder
1/8 tsp salt
3/4 tsp cinnamon
1/4 tsp pumpkin pie spice
*Optional add ins* - mini chocolate chips ( I chopped up a few pieces of dark chocolate)
                                   - Chopped nuts
                                   - etc

Directions:
1.). Preheat oven to 350 degrees and line or spray your muffin tins.
1.)  Grind oats in a food processor or mini blender until it becomes a fine oat flour.  
2.). Place dry ingredients (oat flour, protein powder, stevia, baking soda, baking powder, salt, cinnamon and pumpkin pie spice) in a medium bowl and whisk to blend.
3.). In another bowl, mix wet ingredients (pumpkin, applesauce, yogurt and egg whites).
4.). Add wet ingredients to dry ingredients and stir just until fully combined.
5.). Fill muffin cups 2/3 full and bake for approximately 8-10 minutes for mini muffins and 10-12 minutes for regular size muffins. (My batch made about 18-20 mini muffins)
