Chipotle Chicken Burrito Bowls

Chipotle Chicken Burrito Bowls
 
 
 
 
Chicken Marinade:

 3 cloves minced garlic
2 teaspoons cinnamon
2 Tablespoons chopped chipotles in adobo sauce (REMOVE THE SEEDS) plus 2 Tbsp of the adobo sauce it comes in
2 Tablespoons honey
1/4 cup vinegar
2 Tbsp lime juice
 
Build your Burrito Bowls:
bed of romaine
rice
black beans
red and green peppers
tomatoes
corn
green onions
avocado
*garnish with light cheese, fresh salsa, chopped cilantro and a dollop of nonfat greek yogurt*
 
Directions:
Marinate chicken in fridge for 2-3 hours; grill until fully cooked and serve with fresh burrito bowl ingredients.
