Creamy Chicken and Broccoli over Quinoa Rice (slow cooker)

Creamy Chicken and Broccoli
over Quinoa Rice
(slow cooker)
3-4 boneless chicken breasts
1 can cream of chicken soup
1 can of cheddar soup
1 cup chicken broth
1/4 tsp salt
1/4 tsp Cajun seasoning
1/4 tsp garlic salt
1 cup nonfat plain greek yogurt
6 cups broccoli florets (fresh, steamed or frozen and thawed)
cooked quinoa, brown rice or both
1.)  In a medium bowl, mix soup cans, broth and seasonings.
2.)  Place chicken in crockpot and pour sauce mixture over.
3.)  Cook on low (6-8 hours) or high (4-6 hours).
4.)  During last 30 minutes of cooking, shred chicken with a fork and stir in greek yogurt and broccoli.  Heat until bubbly.
5.)  Serve over quinoa, rice or a combination of both.  Enjoy!
