Red Velvet Cheesecake Mousse
Ingredients:
3 -4 Red Velvet Cupcakes
1 box of instant Cheesecake Pudding Mix (can use sugar -free)
1 1/2 cups skim milk
2 cups cool whip (divided)
1/4 cup semi-sweet chips
Directions:
1.) In a small bowl, mix milk and pudding mix; when pudding starts to thicken, whisk in 1 cup cool whip
2.) In a medium bowl, place broken up cupcakes, pudding mixture, 1 cup of cool whip and chocolate chips.
3.) Fold ingredients only 5-6 times. You don't want to over stir, the best part of this mousse is how the ingredients are swirled together but not fully combined allowing you to still taste the ingredients separately.
4.) Garnish with additional chocolate chips or sprinkles.
