Eggplant Lasagna Stacks


Eggplant Lasagna Stacks

 Ingredients:
1 large eggplant
Meat Sauce ( try my "With Blonde Ambition" spaghetti sauce seen here)
Cheese mixture 
      -8oz low fat cottage cheese

      - 1/2 cup low fat mozzarella
      - 1 egg white
      - 1/4 tsp Italian seasoning
Extra mozzarella sheds and Parmesan for topping


Directions:
1.)Preheat oven to 375 degrees 
2.) in a lightly sprayed sautée pan, toast eggplant disks until both sides are golden brown and seasoned with salt, pepper and garlic powder
3.). Layer ingredients in the following order.....
Layer 2 1/2 of eggplant disks
Layer 3- 1/2 of Cheese Mixture 
4.) repeat all three layers again and finish with last 1/3 of spaghetti sauce
5.) top with a light layer of  low fat mozzarella shreds and Parmesan 
6.). Bake uncovered for 40-45 minutes or until hot and bubbly and delicious!
