Ingredients:
1 mashed banana
1/3 cup creamy peanut butter (warmed in microwave for easier mixing)
1/4 cup brown sugar
2 Tbsp honey or agave
2 tsp vanilla
1 1/2 cup of oats
1 cup crispy rice cereal
2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/2 cup dark or semi-sweet chocolate chips
1/2 cup dried fruit
Directions:
Preheat oven to 350 degrees and place a sheet of parchment paper onto a cookie pan.
In a medium to large bowl, mix mashed banana, warm peanut butter, brown sugar, honey and vanilla until smooth.
Stir in remaining dry ingredients and chill dough in fridge or freezer for 30 minutes to an hour.
Remove dough and using tablespoons scoop and pack drops of cookie dough mixture onto cookie pans. (I was able to do 12 cookies on 2 sheets since these cookies do not spread.) Dough will be slightly crumbly so I scooped out balls against the side of the glass bowl to form a dough ball more easily and used the other spoon to slide the drop onto the sheet.
Bake in the oven for 12 - 15 minutes or just until cookies begin to "golden".
