Pumpkin Pie Crunch (*reduced sugar*)

Ingredients:
1 can pumpkin puree (not pumpkin pie filling)
1 can of evaporated milk (can use fat free)
2 eggs plus 2 egg whites
2/3 cup of sugar (I used about half white and half brown sugar)
Tablespoon pumpkin pie spice
1 box of gluten free yellow cake mix
1/2 stick of melted butter
1 cup chopped pecans

Directions:
Preheat oven to 350 degrees and lightly grease or spray a 9x13 in pan.
In a medium bowl, mix all ingredients well except for cake mix, butter and pecans and pour pumpkin batter into prepared pan.  Evenly sprinkle dry cake mix over all over batter and top with chopped pecans. Evenly drizzle butter over entire dish (it's okay that there will be dry spots).  
Bake uncovered for 45-50 minutes.
Let cool for 10 minutes and serve warm or cool with a dollop of whipped cream.

PB Krispy Bites



Ingredients:
1/2 cup honey
6 Tbsp peanut butter
1/2 tsp salt
tsp vanilla
2 cups Rice Krispies
1 cup oat flour

Directions:
1.) Place peanut butter and honey in a microwavable bowl and heat until just warm (about 15-20 sec)
2.) Stir in remaining ingredients one at a time.
3.) Fill mini muffin lined cups with teaspoon sized mounds and press well with back of greased spoon to form a round, cookie shaped bites.
4.) Freeze or chill in fridge until cookies firm.  Best stored in freezer/fridge as well!



Apple Salad with Peanut Brittle Topping


Ingredients:
2 Granny Smith Apples (cored and diced)
1 pkg. instant vanilla pudding (can be sugar-free)
1 cup milk
1/2 container of cool whip
1/3 cup coarsely chopped peanut brittle (plus additional 2-3 tbsp. for topping)


Directions:
1.)  In a medium bowl, mix milk and pudding mix.
2.)  When pudding starts to thicken, fold in cool whip, diced apples and 1/3 cup peanut brittle. 
3.)  Garnish with additional tablespoons of brittle.  Keep refrigerated until ready to serve.

GF Ginger Kisses


Ingredients:
1 cup of oat flour (oatmeal blended to a grainy powder in a food processor, blender or Nutribullet)
tsp baking powder
tsp ground ginger
1/2 tsp cinnamon
1/4 tsp salt
2 Tbsp softened butter
1 egg, room temp
tsp vanilla
1/4 cup molasses
4 Tbsp of honey
Hershey Kisses (i used caramel.....hmmmmm...c-a-r-a-m-e-l, but any flavor will do)

*Keep an eye out for seasonal bags as well for a creative twist!
Directions:
Preheat oven to 350 degrees and spray or line your cups in a mini muffin tray.
Whisk first 5 ingredients in your medium size "dry bowl"; and in a separate bowl, whisk remaining "wet ingredients".
Pour wet ingredients into dry bowl and stir until combined.
Evenly place scoops of dough in each muffin cup, flatten slightly with a spoon and bake for 10-12 minutes.
Remove from oven and immediately push Hershey Kiss into center of each cookie.
Allow to cool before serving.

Hawaiin Style Banana Split




Ingredients:
1 hollowed out pineapple shell
Favorite frozen yogurt and toppings.  I suggest........
chocolate with marshmallow creme
vanilla with chocolate sauce
strawberry with strawberry sauce
whipped cream
nuts
maraschino cherries
sprinkles

Directions:
Build your banana split in the order listed above and GO CRAZY!

Secret Ingredient Pumpkin Bread......its pudding

Ingredients:
1 3/4 cup of AP flour (I use gluten free)
1 3.4 oz box of dry pudding mix (I recommend caramel flavor!)
2 tsp baking powder
1 tsp baking soda
2 tsp pumpkin pie spice
1 tsp cinnamon
1/2 cup of butter
3/4 cup of sugar
1 can of pumpkin (you can use less for a lighter, more cakey texture but I LOVE how the extra pumpkin gives it a rich, dense, moist, "fudgier" taste!)
2 eggs


Directions:
Preheat oven to 350 degrees; grease and flour a loaf pan.
In a medium bowl, whisk flour, pudding mix, baking soda and powder, pumpkin pie spice and cinnamon, set aside.
In a separate bowl, blend butter, sugar, pumpkin and eggs.  
Slowly incorporate flour mixture into wet bowl until fully combined.
Pour batter into loaf pan and bake on center rack for approximately 55-60 minutes or until center is set.  Let cool before slicing.

Sweet Potato Bars with Butterscotch M&Ms


Ingredients:
3/4 cup flour (can sub gluten free)
1/2 tsp baking powder
1/8 tsp baking soda
1/8 teaspoon salt
1 cup mashed sweet potato
4 Tbsp butter
2/3 cup brown sugar
1 egg
2 teaspoons vanilla or maple extract (I used one of each)
butterscotch M&Ms


Directions:
Preheat oven to 350 degrees and grease or spray the inside of an 8x8 or 9x9 baking dish.
Whisk flour, baking powder, baking soda and salt in a medium bowl and set aside.
In a large bowl, cream butter and sugar.  Blend in sweet potato, egg and vanilla.
Slowly blend flour mixture into sweet potato mixture until fully combined.
Spoon into greased dish, spread evenly and sprinkle with 1/3 cup of M&Ms.
Bake on 350 for 20 minutes.

World's Healthiest Chocolate Chip Cookie


Ingredients:
1 cup dry lentils
1/2 cup warm peanut butter
1/4 cup honey
1/2 Tbsp baking powder
1 tsp vanilla
2/3 cup semi-sweet chocolate chips plus a handful for decorating the tops.

Directions:
1.)Place cup of lentils and 2 cups of water in a pot and boil approximately 15 minutes until tender.
2.)Drain and rinse thoroughly.
3.)Place half of lentils, and all other ingredients EXCEPT for chocolate chips in a food processor. *Tip*-I like to put the honey and peanut butter closest to the blade to help keep things mobile.
4.)Pulse until mixture begins to break down but is not fully processed pausing to scrape the sides if necessary.
5.)Add in remaining lentils and blend until batter is completely combined but retains some texture (will look a little like an oatmeal mixture).
6.)Remove blade and stir in 2/3 cup of chocolate chips.  Place in fridge and chill for atleast 2 hours. (muy importante'!)

7.)Remove batter from fridge and Preheat oven to 350 degrees.
8.)Using a cookie scoop (also muy importante'!) scoop out dough balls onto a baking sheet lined with parchment paper and top with remaining chips. *see photo below*
9.)  Bake for approximately 12-15 minutes depending on size of cookies.  
10.)  Allow cookies to cool COMPLETELY before handling as they are very tender and malleable!  In fact, they will continue to firm over the day and are usually best on day 2 or 3!......but who can wait that long, right?

Chips Ahoy Cookie Delight


Ingredients:
1 package of Chips Ahoy cookies
2 small packages of instant vanilla pudding (prepared and set)
large tub of cool whip
caramel syrup
crushed heath bar candies

Directions:
1.) Line a 9x13 dish with a layer of chocolate chip cookies
2.) Gently cover with half the pudding mixture and spread evenly to cover all of cookies.
3.) Next, spread on a layer of cool whip, evenly drizzle with caramel and sprinkle a layer of heath bar bits.
4.) Repeat exact layers one more time......cookies, pudding, cool whip, caramel and heath bar bits.

5.) Lastly, cover and refrigerate OVERNIGHT! The magic happens during the overnight chilling process when the pudding softens the cookies making this dessert what it is!!

Dark Chocolate Granola Bark

Dark Chocolate Granola Bark


Ingredients:
24 oz of dark chocolate
12 oz bag of fruit and nut granola
sprinkles

Directions:
Line a rimmed baking sheet with parchment paper
Melt chocolate completely in a double boiler
Pour onto parchment and spread to desired thickness.
Immediately sprinkle granola over chocolate followed by sprinkles
Using the back of a spatula, barely press granola and sprinkles into chocolate and let harden.
Cut into desired number of squares for sharing!

Pumpkin Spice Whoopie Pies with Biscoff Filling

Ingredients:
1 box spice cake mix
15 oz can pureed pumpkin
1 egg
1/2 cup water

Biscoff Frosting:
1/2 cup room temperature butter
1 cup biscoff
1 1/2 cup powdered sugar

Directions:
1.)  Preheat oven to 350 degrees and line two baking trays with parchment paper. 
2.)  In a medium bowl, combine cake mix, pumpkin, eggs and water and mix until very few lumps are visible.
3.)  Using a small cookie scoop, scoop out rounded scoops of batter onto baking trays.  (These do not spread so you may want to flatten and smooth the tops of each mound with the back of the scoop as you scoop them out.  I was able to do 12 per tray)
4.)  Bake in the oven for approximately 10-12 minutes.
5.)  While baking, begin to make frosting by creaming butter and biscoff.  Slowly add in powdered sugar and beat until light and fluffy. 
6.)  Spoon frosting into a quart-sized ziplock baggie and cut tip off of one corner.
7.)  After whoopie pies have COMPLETELY cooled, pipe frosting onto half of whoopee pies starting with the outer rim of each one.
8.)  Place other half of whoopie pie on top of each accordingly and serve : )

Pumpkin Spice Chex Mix


Ingredients:
6 cups Honey Nut Chex cereal
1 cup chopped pecans
1/2 stick of butter (melted)
2 tsp vanilla
1/4 cup brown sugar
1 Tbsp pumpkin pie spice
1 cup pumpkin spice M&M's
1/2 cup dried cranberries
1 cup pretzels
1/2 cup candy corn


Directions:
Place cereal and pecans in a very large, microwavable bowl. 
In a small bowl, mix butter and vanilla and pour evenly over cereal.
In a small bowl, mix sugar and spice and sprinkle evenly over cereal; toss well to coat.
Microwave on high for 4-5 minutes, tossing and stirring after every minute.  After last round, fold in M&Ms, pretzels, candy corn and cranberries.
Spread on wax paper to cool and crisp.....enjoy!  Seriously....it won't be hard to do!

"Campus Queen" Monster Cookies



Ingredients:
1 cup uncooked oats
1/2 cup whole wheat flour
1/4 cup white flour
1 1/2 tsp baking powder
1/8 tsp salt
1 Tbsp butter, softened
1 egg white
1 tsp vanilla
1/4 cup "Better N" Peanut Butter (can be found at Harp's or Target but you can sub with regular, creamy PB)
1/2 cup brown sugar
1/4 cup almond milk (can sub regular milk)
2 Tbsp mini M&M's
2 Tbsp mini chocolate chips
additional M&M's and chocolate chips for garnish

Directions:
 1.) In a medium bowl, whisk oats, flours, baking powder and salt; set aside.
2.)In another medium bowl, mix butter, egg white, vanilla and peanut butter until creamy. Add in brown sugar and milk and mix.
3.)Slowly incorporate flour mixture into wet ingredient bowl and mix until combined. 
4.)Fold in 2 Tbsp each of M&M's and chocolate chips.
5.)Chill dough for 30 minutes to an hour.
6.)When ready to bake, preheat oven to 325 degrees and line a cookie sheet with parchment paper. 
7.)Drop approximately 15-16 dough balls onto sheet and slightly flatten to form cookie shape with fingers. (Cookies will not spread because of the very little amount butter so whatever shape the dough is in will be the shape to cookie will be!) 
8.)Strategically place a few M&M's and chocolate chips on top of each cookie for pretty finish.
9.)Bake for 10-12 minutes.  Allow to cool slightly before transferring.  Enjoy!

Pumpkin Spice Torte

Pumpkin Spice Torte
 


Cake Ingredients:
1 box spice cake mix
15 oz can pumpkin puree
1 egg and 2 egg whites
1/4 cup almond milk

Pudding Whip Frosting:
8 oz block fat free cream cheese (softened)
3 small boxes of instant cheesecake pudding
3 cups skim milk
8 oz container thawed cool whip

Garnish:
Caramel Drizzles
chopped pecan
toffee bits

Directions:
1.)Preheat oven to 350 degrees.  Generously spray and flour the insides of two 9in round cake pans and set aside. 
2.)In a large bowl, combine all cake ingredients until no lumps are visible.  Pour half of the batter into each 9in cake pan and bake for approximately 28 minutes or until center is done. 
3.)While cakes are baking, begin to mix frosting by whisking pudding mixes and 3 cups milk in a medium bowl..  Let set for 5 minutes in fridge to firm. 
 4.)In a large bowl, cream block of softened cream cheese with a hand mixer until smooth.   Mix in pudding and cool whip until fully combined and takes on a  light and fluffy texture.  Place is fridge.  5.)Remove cake from oven and let cool for 5 minutes before turning out on plate or wax paper. 
 6.)After cakes have cooled COMPLETELY slice each in half and begin to assemble torte by layering the following.....

1.)bottom layer of cake 1
2.) 1/4 of pudding mixture
3.) top layer of cake 1
4.)  1/4 of pudding mixture
5.)  bottom of cake 2
6.)  1/4 of pudding mixture
7.)  top of cake 2
8.)  remaining 1/4 of pudding mixture
9.)  top with caramel drizzles, chopped pecans and toffee bits

*bakers tip - for "ribbon-like" pudding layers on your torte, place some of the pudding in a gallon-size ziplock bag, cut corner of bag and pipe a fairly large ribbon around each edge of cake as you are assembling.  (pudding will not run so you can pipe at the very edge of each layer)*

Fresh Apple Cake with Cream Cheese Pudding Whip Frosting



Ingredients:

Dry Ingredients:
1/2 cup whole wheat flour
1/2 cup AP flour
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Wet Bowl:
1 tsp vanilla
1/2 tsp butter extract
1/4 cup egg white or whites from 2 eggs
1/2 cup white sugar
1/4 cup brown sugar
2 Tbsp apple sauce
2 Tbsp nonfat plain greek yogurt

1 large Granny Smith apple peeled and diced

Cream Cheese Pudding Whip Frosting:
4 oz fat free cream cheese (softened)
1 small package of sugar free vanilla, white chocolate  or cheesecake flavored pudding mix
1 cup milk (I used almond)
8 oz tub of thawed cool whip

Frosting Directions:
In a small bowl whisk pudding mix and milk and let set for 5 minutes.  In a medium bowl, blend cream cheese with a hand mixer.  Add in pudding and cool whip and blend until combined. 

Directions:
Preheat oven to 350 degrees and lightly spray an 8x8 baking dish.   In a medium bowl, whisk dry ingredients; set aside.  In another medium bowl, stir together wet ingredients until no lumps are visible.  Stir in dry ingredients until just combined careful not to over-mix.  Fold in diced apples and transfer to baking dish.  Bake at 350 for 30 min.  Let cool completely before frosting cake and refrigerate for 30 minutes before serving.  Store in fridge.

The Perfect Chocolate Chip Cookie

 
    As some of you know, I've been on a journey for a few years now.  One that has lead me down many roads paved with gooey caramel, creamy peanut butter and into the streets of sugary sweetness.  I have climbed the highest of chocolate chunks,  strolled through the valley of milky ways and wandered through the hearty fields of "oaty" goodness.  All in search of the perfect cookie recipe.  One might ask why this tortured soul might endure such hardships in order to find the answer to one of life's greatest questions......which cookie truly reigns superior?  In a world full of countless, pin-worthy, bake-sale believing cookies all claiming to be the best....which one is King?  What is the truth....or is it all subjective? Okay, maybe that was a little melodramatic but never-the-less, when it comes to cookie perfection.....I have become a woman on a mission.  
        This mission began innocently enough after attending a family member's wedding in which each grandmother of the bride and groom baked their best cookie as a heartfelt and personal take-home favor for the party guests.  I remember thinking, "What a sweet tradition to hand down to your loved ones!" I decided then and there, I needed a signature cookie recipe to hand down to my daughter, Kennedy one day.

Our family is no stranger to the dance floor....yep, my kid's the one busting out the splits in the background!  You know we totally owned it that night!!!!
 
 



 
     And so the journey began.  I'd been baking since childhood so I figured I had a pretty good grasp on what it took to make a great cookie.  First, I tried lots of different variations that I had always wanted to experiment with; things I thought would marry well in a recipe.  I even tried my own substitutions from time to time.  As I explored the world of confectionary creativity, certain common themes or guidelines became more visible to me in recipes.  There seemed to be a connection between these guidelines and the more popular cookie recipe combinations.  Things like "real butter", which I don't typically cook with, and "chilling dough overnight", which I refrained from mostly due to lack of planning on my part, became consistent cookie characteristics in all the best recipes.  Nevertheless, I put little thought or merit in these "suggestions" and continued to deviate from the recipe guidelines and forge my own way.  Because really, what does it matter if one baker does it one way and another prefers an alternative method?  Finally, after batch upon batch of "pretty good" cookies.....I bit the bullet, buckled down and took things more seriously.  I decided to take these "common threads" interwoven into so many great recipes not as helpful tips and suggestions but as basic baking rules and guidelines.  And when I did.......to my surprise and delight, the results were glorious, gooey cookie goodness!
     If you're wondering why this post about cookies seems to be written with so much conviction, its because I realize that in the past, my own life has displayed a mirror image of this cookie journey.  For many years, I based each day on what I thought was right.  I was guided by my own sense of purpose and preference.  I had developed into a "pretty good" cookie on my own but I couldn't help but notice other "excellent" young women  and how they seemed to thrive and live  in a way I deeply longed for.  And like the excellent cookie recipes, they all shared common traits.....time with God, disciplined study of the word and serious practice of the everyday principles Jesus preached about.  And just like the cookies, when I put each of these simple, time-tested principles to practice I was amazed at how dramatically superior the results were.  Because only God can take a gooey bowl of "semi-sweet" mess and with a little warmth, turn it into something worthy of passing down to our most precious blessings; our children and loved ones.

   I'm still a recipe in progress but I'm pleased to say the Holy Spirit is making positive adaptions in me every day!  As for the actual cookie recipe, I have comprised a list of common guidelines I learned throughout this process and have listed them as well as my best cookie recipe for you below.  I call them my "Cookie Commandments".  Enjoy : )

The Cookie Commandments
1.)Always use butter (unsalted) not margarine.  No excuses, the taste and quality is unmatched by any other substitution and the cookies will not turn out the same if you don't!
2.) Butter temperature must have recently arrived at room temperature.  Plan ahead.... cold, cool or warmed in the microwave butter will all give inferior results as will butter that has been at room temperature for too long and has gotten too warm and melted.  
*There has been an influx lately of browned butter recipes.  These are not interchangeable with softened butter recipes and vice-versa. Each recipe has its own configuration so for best results you must stay consistent with each*
3.). Eggs must also be at room temperature.
4.). When creaming sugar and butter, do NOT over-beat by mixing any longer than 2 minutes. I set a timer so I don't get distracted.  Over-beating will mix too much air into the dough causing the cookies to spread too much during the baking process.  
5.). Use the scoop and sweep method for measuring your flour.  Unless you weigh your ingredients, the truest way to accurately measure your flour is to scoop it freely out of a large bowl/container and gently sweep off the top.  Otherwise, too much flour packs into the cup leaving a dense, cakey texture for your cookie instead of the chewy crispness you crave!
6.) Understand the cause and effects of white versus brown sugar and conscientiously choose proper sugar-to-brown sugar ratios to ensure you get your desired texture.  A recipe with a higher white sugar content will produce a
crunchier, crispier cookie.  Alternatively, a recipe with a higher brown sugar 
content will produce a softer, chewier cookie with a slight hint of caramel flavor. 
7.). Understand the difference between baking powder and baking soda and the cause and effects of each.  Both are leaveners; however, due to the differing ingredients they create different effects.  They ARE NOT interchangeable!  Bottom line, stick to the recipe or risk throwing off the balance between the base and acidic mixture leaving you with a disappointing result.
8.). Always use fresh baking soda (it usually expires and becomes inactive around the 3 month mark)
9.). Always use high-quality chocolate!  Don't skimp!  You're treating yourself so make it count and do it right!!!!!  A good rule of thumb is to only bake with chocolate you would eat on its own. (I realize some have less discrepancy in this assessment than others ; )
10.). Use good, quality vanilla.
11.) Chill dough for at least 2 hours in fridge or and hour in the freezer.  This will allow you to easily scoop out firm, well-packed dough balls that are more aesthetically pleasing as well!
12.)  Bake cookies on parchment paper.  It allows the cookies to bake all the way through without burning on the bottom.
13). Use a spring hinge cookie scoop! Not only does it make your cookies look professional but it consistently allows you to scoop out identical sizes ensuring you don't under or over bake part of the batch.
14.) Strategically place chocolate chips or mix-ins on top of cookies just before 
baking in the oven to give your cookies the beautiful "bakery" look.
 
 
Just take a look at those beautiful, humungous scoops!  They look like they should go on top of a waffle cone! (actually, that's not a bad idea!)

 Our recipes may not always come out flawlessly but the memories we're making are sheer perfection!
 


 
The Perfect Chocolate Chip Cookie 
Ingredients:
3/4 cup of butter (room temperature)
3/4 cup of brown sugar
1/2 cup white sugar
2 eggs
2 cups AP flour
1/4 cup oat flour (oats ground in ninja, blender or food processor)
tsp baking soda
1/2 tsp salt
2 tsp vanilla extract
1 1/2 cups semi-sweet chocolate chips plus 1/4 cup more for garnish

Directions:
1.)  In a medium bowl, whisk flour, oat flour, baking soda and salt and set aside.
2.)  In a large bowl, cream butter and sugars until light and fluffy but remember not to go over your 2 minute mark!  Beat in eggs and vanilla one at a time.
3.)  Carefully stir your flour mixture into your butter mixture and mix until just combined. 
4.)  Fold in chocolate chips, cover dough bowl and chill in fridge for at least an hour or 30 minutes in freezer.
5.) When ready to bake, preheat oven to 350 degrees and remove dough from fridge.
6.) Using a large cookie scoop, scoop out dough balls and place on parchment lined cookie sheets. (I baked 6 large cookies on each sheet)
7.)  Strategically place chips on top of dough balls for decoration and bake for 10-12 minutes or until cookies are just golden on the edges but still soft in the middle.
8.)  Allow cookies to cool completely before removing from pan. Enjoy with friends, family and a cold glass of milk ; )

Hot Fudge Cake in a Crockpot

Ingredients:
1 cup AP flour
1/2 cup sugar
6 Tbsp cocoa powder (divided)
2 tsp baking powder
 1/2 tsp salt
1/2 cup milk
2 Tbsp greek yogurt or applesauce
1 tsp vanilla extract
1/2 cup chopped nuts (optional)
3/4 cup brown sugar
1 1/2 cups hot water
 
Directions:
!.)  Spray slow cooker with nonstick spray or use a liner
2.)  In a bowl, sift together flour, sugar, 2 Tbsp cocoa powder, baking powder and salt.
3.)  Next, stir in milk, yogurt/applesauce and vanilla extract until fully combined.
4.)  Fold in nuts (if using) and spread mixture (which will be thick) on the bottom of your crockpot.
5.)  In a small bowl, combine brown sugar, remaining 4 Tbsp cocoa powder and hot water until smooth.  Pour mixture over batter but DO NOT STIR!!!!!  The brown sugar/cocoa liquid mixture will sit on top of cake and create a pool of hot fudge hidden underneath your cake as it cooks!  Like a gooey, delicious surprise hidden all along!!!
