Spinach Smothered Chicken

Spinach Smothered Chicken

Ingredients:
4-5 boneless skinless chicken breasts
Cavendar's Greek seasoning
2 cups fresh spinach (approx)
1 cup chopped fresh mushrooms
1/2 onion (diced in large pieces)
2 cloves minced garlic
Salt and pepper
Shredded light cheese (mozzarella or Swiss is best)

Direction:
1.). Preheat oven to 375 degrees
2.) Place chicken in a lightly sprayed baking dish and season both sides well with seasoning.
3.). Place in oven and bake for first 20 minutes.
4.). While chicken is baking, sautée mushroom and onion over medium high heat until mushrooms begin to golden and onions turn slightly translucent.  
5.). Add in spinach and garlic and sautée until barely wilted. Remove from heat and sprinkle with salt and pepper.
6.). After 20 minutes of baking, remove chicken from oven and top each breast with spinach mixture followed by desired amount of shredded cheese.
7.) Return to oven to bake an additional 20 minutes. Enjoy!
