Captain Crunch Chocolate Chip Cookies
Ingredients:
1 cup firmly packed brown sugar
1/2 cup butter (softened)
2 eggs
1 teaspoon vanilla
1 1/2 cups AP flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups coarsely crushed captain crunch cereal
1 cup semisweet chocolate chips
Directions:
Preheat oven to 375 degrees.
In a medium bowl, beat sugar and butter until light and fluffy.
Mix in eggs and vanilla
Combine flour, baking soda and salt in a separate bowl. Mix well into wet ingredients.
Stir in cereal and chocolate chips until incorporated.
(At this point, I prefer to cover and chill my dough for at least 2 hours, preferably overnight)
Drop rounded teaspoons of dough onto cookie sheet and lightly roll into ball form
Bake 10-12 minutes or until lightly golden.
Makes about 2 dozen cookies.
