Light Chicken Cordon Bleu Bundles
4-5 boneless, skinless chicken breasts
10 slices of thin deli ham
5 slices of light swiss cheese
4 Tbsp panko bread crumbs
1/2 tsp Cajun seasoning
Sauce:
1 can cream of chicken soup
1/4 cup nonfat plain greek yogurt
1/4 cup skim milk
1 heaping Tbsp Dijon mustard
pepper to taste
Directions:
1.) Preheat oven to 375 degrees
2.) Flatten chicken breasts with a mallet or rolling pin and place face down.
3.) Place two slices of ham and a slice of cheese on each breast, roll up tightly and secure with a couple of toothpicks (be sure to place them where they can easily be found after cooking!)
4.) Place each chicken bundle seam side down in a lightly sprayed baking dish.
6.) In a small bowl, mix panko and seasoning and sprinkle evenly over chicken.
7.) Lightly spritz each bundle with cooking spray and bake for 35-40 minutes. Serve topped with warmed sauce.
