Strawberry Balsamic Quinoa Salad
1 cup of cooked and cooled Quinoa
two peaches or one mango (peeled and diced)
1 cup of diced red bell pepper
1/2 cup shelled edamame
1/2 cup chopped red onion
1/4 cup coconut flakes
1/4 cup sliced almond
1/4 cup dried cranberries
handful of chopped, fresh cilantro
1/4 cup Kraft Strawberry Balsamic Dressing
Directions:
Place all ingredients in a medium bowl and pour dressing over all. Toss lightly, cover and chill in fridge for at least 30 minutes before serving. Enjoy!
