Ingredients:
Dry Ingredients:
1 cup flour
1/3 cup sugar
1 1/2 tsp baking powder
1/4 tsp salt
Wet Ingredients:
2/3 cup milk with 1/2 tsp apple cider vinegar (let set for 5 min to make buttermilk)
1 egg white
3 Tbsp applesauce
1/2 tsp vanilla
Glaze:1 3/4 cup powdered sugar
tsp vanilla
1/4 cup milk
Directions:
Preheat oven to 350 degrees and lightly spray a mini muffin tin. In a medium bowl, whisk dry ingredients and set aside. In another medium bowl, mix wet ingredients. Carefully stir dry bowl into wet bowl and mix until just combined ( do not over mix or muffins will lose their light, fluffy texture)
Fill each muffin cup 3/4 of the way with batter and place in oven. Bake for 10-12 minutes or until muffin tops are beginning to golden.
For Glaze: While donuts are cooling, whisk glaze ingredients in a small bowl until smooth and runny. After donuts have cooled at least 5 minutes, dip each donut once in glaze and let set on wax or parchment paper.
