Healthy Blueberry Breakfast Cake
1 cup whole wheat flour
1 cup white flour
teaspoon baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup brown sugar
2 tablespoons butter
2 tablespoons unsweetened applesauce
1 egg
teaspoon vanilla extract
1 cup non-fat plain greek yogurt
1/4 cup skim milk
1 to 1 1/2 cups fresh blueberries
Directions:
Preheat oven to 350 degrees and lightly spray an 8x8 baking dish.
In a medium bowl, whisk together flours, baking soda, salt and cinnamon.
In a large bowl, beat brown sugar, butter and applesauce. Beat in egg, vanilla, yogurt and milk until blended.
Carefully mix flour into wet bowl and stir until just combined. (you can add in extra milk here if batter is too thick)
Fold in blueberries and transfer batter to baking dish.
Bake for 30 minutes or until knife inserted into center comes out clean.
