Loaded "Fake" Potato Casserole

Loaded "Fake" Potato Casserole
 
 
 
Ingredients:
2 bags frozen Cauliflower
2 cups chicken broth
1/4 cup plain nonfat greek yogurt
salt and pepper to taste
light or fat free shredded cheddar cheese
turkey bacon crumbles
sliced green onions
 
Directions:
Preheat oven to 375 degrees.  In a large pot, boil cauliflower in chicken broth until fully cooked.  Drain in a collander until all liquid has drained.  Return to pot, add in 1/4 cup greek yogurt and mix with a mixer until mixture has the consistency of mashed potatoes with a few lumps. Salt and pepper to taste (you won't need hardly any salt since the cauliflower will have absorbed flavor from the broth).   Place mixture in a lightly sprayed, oven-safe dish and top with desired amount of cheese and turkey bacon crumbles.  Bake for approximately 25-30 minutes.  Top with sliced green onions and serve.
