Cinnabon Cookies from boxed muffin mix
Ingredients:
1 box Cinnamon Streusel Muffin or Quick Bread Mix (save cinnamon sugar packet for later)
1/2 stick butter or margarine (room temperature)
1/2 block fat free cream cheese (room temperature)
1/2 tsp vanilla
1 egg
1/2 cup powdered sugar
tsp cinnamon
Directions:
In a medium bowl, cream butter/margarine and cream cheese until light and fluffy. Mix in egg and vanilla. Slowly mix in boxed muffin mix careful not to spill out of the bowl. Cover dough and chill for two hours in fridge or 30-45 minutes in freezer.
When ready to bake, preheat oven to 350 degrees. In a small bowl, combine cinnamon sugar packet, cinnamon and powdered sugar. With well greased hands, scoop out dough balls using a tablespoon or scoop, roll into a ball, roll each ball in cinnamon sugar mixture and place on a baking sheet. Bake for 12-15 minutes.
While baking, add just enough water to bowl of cinnamon sugar mixture to make icing. (Mixture should be about the consistency of toothpaste). Transfer icing to a small ziplock baggie, cut the tip off of one corner and when cookies have completely cooled, pipe a swirl on top of each cookie to resemble little cinnamon rolls!
