Pumpkin and Quinoa Stuffed Apples
Ingredients:
3-4 medium apples (I used gala)
3/4 cup canned pumpkin puree
2 Tbsp truvia or stevia
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1/2 cup cooked quinoa
3 Tbsp dried fruit and nut mix (divided)
1/4 cup orange or apple juice
Directions:
1.) Preheat oven to 350 degrees.
2.) Slice tops off apples and bottoms if necessary for a sturdy base
3.) Core apples as seen here in my previous stuffed apples post to create an apple "bowl" and place in an oven safe dish.
4.) In a small bowl, mix all remaining ingredients except for 1 Tbsp of dried fruit nut mix for topping and juice.
5.) Carefully spoon mixture into each apple, pour juice into bottom of baking dish and bake uncovered for 40-45 minutes (apple tops may be baked on top of apple or on the side)
6.) Serve warm with a drizzle of honey and topped with remaining dried fruit and nut mix.
