Hummingbird Bread

Hummingbird Bread
 

 
 
Ingredients:
1 box yellow cake mix
1 box instant vanilla pudding (can be sugar-free)
1/2 cup non-fat plain greek yogurt
3/4 cup water
1 egg plus 2 egg whites
2 mashed bananas
8oz can crushed pineapple (undrained)
1  cup pecan pieces (divided)
 
Directions:
1.)  Preheat oven to 350 degrees and lightly spray and flour 2 loaf pans.
2.)  In a medium bowl, combine cake mix, pudding mix, yogurt, water, eggs and bananas and mix with mixer until fully combined.
3.)  Fold in pineapple and pecans and pour batter into loaf pans.
4.)  Bake for 40-45 minutes or until knife inserted comes out clean.  Allow to cool before cutting.
