Cookies and Cream Cupcakes
2 3/4 cups flour
1 3/4 cups fine sugar
2 tsp baking powder
3/4 tsp salt
1/2 cup nonfat, plain greek yogurt
1/4 cup of butter
2 eggs and 2 egg whites
2 tsp vanilla extract
15 oreos, crushed
can of cookies and cream frosting
or
1 box white cake mix prepared as directed (you can sub egg whites and greek yogurt)
15 oreos, crushed
can of cookies and cream frosting
Directions:
Preheat oven to 350 degrees. Sift or whisk dry ingredients in a large bowl to eliminate lumps. Mix in wet ingredients until fully combined but do not over mix. Fold in approximately 15 crushed oreos. Fill cupcake liners and bake at 350 degrees for 18-22 minutes or until done. Cool completely; frost with canned frosting and top with remaining oreos from box. (if you didn't eat them already ; )
