Slow Cooker Chicken and Rice Casserole

 
This is definitely a family favorite!   Quick, easy and much healthier than your average comfort food.  I hope you enjoy it!!


Here is a close-up of the creamy, bubbling goodness!

 



 
Ingredients:
3-4 chicken breasts
1 can cream of chicken soup
1/2 white onion chopped
1 can whole kernel corn (drained)
1 box zatarin's yellow rice (prepared as directed)
 1/2 -1 cup shredded cheddar cheese (depending on your preference for cheese)
Directions:
Place thawed chicken in slow cooker and top with chopped onion and soup; cook on low (6-8 hours) or high (4-6) hours; during last 30 minutes,  shred chicken with a fork; add in rice, corn and cheese and stir until combined.
