World's Healthiest Chocolate Chip Cookie


Ingredients:
1 cup dry lentils
1/2 cup warm peanut butter
1/4 cup honey
1/2 Tbsp baking powder
1 tsp vanilla
2/3 cup semi-sweet chocolate chips plus a handful for decorating the tops.

Directions:
1.)Place cup of lentils and 2 cups of water in a pot and boil approximately 15 minutes until tender.
2.)Drain and rinse thoroughly.
3.)Place half of lentils, and all other ingredients EXCEPT for chocolate chips in a food processor. *Tip*-I like to put the honey and peanut butter closest to the blade to help keep things mobile.
4.)Pulse until mixture begins to break down but is not fully processed pausing to scrape the sides if necessary.
5.)Add in remaining lentils and blend until batter is completely combined but retains some texture (will look a little like an oatmeal mixture).
6.)Remove blade and stir in 2/3 cup of chocolate chips.  Place in fridge and chill for atleast 2 hours. (muy importante'!)

7.)Remove batter from fridge and Preheat oven to 350 degrees.
8.)Using a cookie scoop (also muy importante'!) scoop out dough balls onto a baking sheet lined with parchment paper and top with remaining chips. *see photo below*
9.)  Bake for approximately 12-15 minutes depending on size of cookies.  
10.)  Allow cookies to cool COMPLETELY before handling as they are very tender and malleable!  In fact, they will continue to firm over the day and are usually best on day 2 or 3!......but who can wait that long, right?
