Mexican Corn Salad
with Honey Lime Dressing


Salad Ingredients:
2 ears steamed or grilled corn (little over 2 cups)
1/2 cup chopped red onion
1/2 cup halved cherry tomatoes
1/2 cup rinsed, drained black beans
1 diced avocado 
Handful of fresh chopped cilantro

Dressing Ingredients:
Juice of 1 lime (approximately 2 Tbsp)
2 Tbsp honey
1 clove minced garlic
1/4 cup zesty Italian dressing
Salt and pepper to taste

Directions:
Combine dressing ingredients in a small bowl and mix well.  Place all salad ingredients in a medium bowl, pour dressing over salad and carefully stir to combine.  Marinate in fridge for 30 minutes before serving.
