Oatmeal Cookie Smores Bars
Ingredients:
Bottom Layer:
1 cup old-fashioned oats
1 cup AP flour
1/2 cup light brown sugar
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter or margarine (room temp)
1 tsp vanilla extract
Middle Layer:
1 1/4 cup semi-sweet chocolate chips
1 1/2 cup mini marshmallows
Top Layer:
6 Tbsp light brown sugar
6 Tbsp butter or margarine (room temp)
3/4 cup old-fashioned oats
3/4 cup graham cracker crumbs
6 Tbsp AP flour
handful of mini chocolate chips
Directions:
1.) Preheat oven to 350 degrees; line or lightly grease an 8x8 baking pan.
2.) In a medium bowl, mix all ingredients for bottom layer until a crumbly cookie dough base forms. With greased hands, gently press dough onto bottom of baking pan and bake for 10 minutes or until lightly brown on top.
3.) While bottom layer is baking, begin making top layer by blending butter and brown sugar in a medium bowl until light and fluffy. Next, mix in oats, graham cracker crumbs and flour until combined.
4.) Remove bottom layer from oven; evenly sprinkle chocolate chips over cookie base followed by an even layer of marshmallows.
5.) Using a teaspoon, scoop out spoonfuls of top layer mixture and evenly drop dough over chocolate chips and marshmallows. Using your hands, gently spread out dough ball and slightly press into mixture. The top layer will have gaps, but will spread out as it bakes leaving only small "peep holes" of the gooey smore layer underneath!
6.) Return to oven and bake an additional 5 minutes.
7.) Remove from oven let cool. Top "semi"-cool bars with the handful of mini chocolate chips. Allow bars to fully cool before cutting.
