Chocolate Chip Squash Donuts
Ingredients:
1 1/2 cup flour (I recommend whole wheat, or at least half whole wheat, for extra fiber!)
1/4 cup stevia, sugar or honey (your choice)
1/4 cup brown sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 egg
1/2 cup unsweetened applesauce or nonfat plain greek yogurt (your choice)
1/4 cup skim milk plus 1 tsp vinegar to make buttermilk
1 tsp vanilla
1 cup grated squash
1/2 cup semisweet chocolate chips
Directions:
1.) In a medium bowl, sift dry ingredients (flour, sugars, soda, cinnamon and salt.
2.) Place all wet in ingredients (egg, yogurt/applesauce, buttermilk, vanilla and squash) in a mini-blender or food processor and blend for 30 sec to a minute.
3.) Pour wet ingredients into dry and stir until fully incorporated. Add in chocolate chips.
4.) Pour batter into a sturdy ziplock baggie and pipe into donut pan/ donut maker through a small hole cut from the corner of the baggie. Bake according to donut maker/pan directions.
