Stuffed Zucchini Boats
Ingredients:
3 large Zucchini (washed and dried)
1 lb lean ground turkey
1 package onion soup mix
2-3 Tbsp nonfat plain greek yogurt
1 1/2 cups chopped veggies (I used onion, mushroom and the pulp from the zucchinis)
sprinkle parmesan
Directions:
1.) Preheat oven to 350 degrees and lightly spray a a baking dish.
2.) Slice zucchini length wise and using a spoon, scoop out center to create boats. (reserve pulp)
3.) Sautee veggies until golden brown and remove from pan.
4.) Using same pan, brown ground turkey and drain grease (not necessary if using lean meat!) Stir in dry soup mix, greek yogurt and sautéed veggies.
5.) Fill zucchini boats with meat mixture and sprinkle with parmesan cheese.
6.) Bake for 30 minutes (covered for 20 minutes and uncovered for 10 minutes). Enjoy!
