Fresh Strawberry Cake
with Fat-Free White Chocolate Pudding Whipped Cream
Ingredients:
1 box white cake mix
3 oz box strawberry jello (can be sugar-free)
1/2 cup water
3/4 cup applesauce or greek yogurt
1 cup frozen strawberries (thawed and chopped) or 1 cup of container strawberries in juice (thawed)
2 eggs plus 2 egg whites
Directions:
1.) Preheat oven to 350 degrees
2.) Mix cake mix, jello, water, applesauce/yogurt and eggs until fully combined. Add in strawberries.
3.) Pour batter into a well-greased and floured baking pan and bake as directed on box.
Icing:
1 box instant sugar-free white chocolate pudding
1 cup skim milk or 1/2 cup milk 1/2 cup strawberry juice
1 tub fat-free cool whip
4 oz fat-free cream cheese (room temp)
1/3 cup stevia or powdered sugar
*optional- blend in fresh strawberries for an added touch*
Icing Directions:
Blend cream cheese until light and fluffy; slowly add in stevia. In a separate bowl, mix milk and pudding, when it starts to set, blend in with cream cheese mixture. Fold in cool whip and ice cake accordingly. This dessert is best kept refrigerated.
