Black Bean Truffles

Black Bean Truffles
 
 
 
This is a fun adaption on my recent black bean brownie recipe seen here . The black bean base gives you the same rich, chocolatey truffle taste that is much healthier than traditional truffle recipes.  All you have to do is mix in your cream cheese, roll into balls and dip!  I hope you enjoy them!

Black Bean Brownie Ingredients:
15 oz can black beans (rinsed and drained)
1 egg plus 2 egg whites
3 Tbsp nonfat greek yogurt
1/4 cup cocoa
pinch of salt
tsp vanilla extract
2/3 cup white sugar or (low sugar option) 1/4 cup white sugar + 1/2 cup stevia
tsp instant coffee
*optional mix-ins* walnuts, chocolate chips, etc.
 
Directions:
1.) Preheat oven to 350 degrees and lightly spray an 8x8 pan
2.) Dump all ingredients (except for optional mix-ins) into a blender and blend until completely smooth; stir in any optional mix-ins
3.)  Pour brownie batter into sprayed dish and bake for approximately 25 minutes 
 
Truffle Ingredients:
Pan of black bean brownies
4 oz room temperature cream cheese (can be fat free)
dipping chocolate
sprinkles
 
Truffle Directions:
1.)  Crumble cooled brownies in a large bowl
2.)  Mix in cream cheese
3.)  Roll into balls and freeze until extremely firm (atleast 2-3 hours is best or even overnight)
4.)  Melt chocolate, dip truffles and garnish with sprinkles immediately (chocolate will set within 30 seconds due to the frozen state of the truffles)
