Black Bean Brownies

Black Bean Brownies
 

 
   You won't believe how good these are!  And the best part is they actually have nutrition in them!  I have even included a low-sugar optional for you as well! The results were slightly different but both delicious!  The traditional white sugar variation makes more of a "chocolate cake-like" taste and texture which was the definitive kid's choice.  The low sugar option will give you a consistency and flavor of a semi-sweet, flourless chocolate cake which the adults preferred.  Either way, I think you'll be pleasantly surprised by the sweet and tasty outcome!
 
Ingredients:
15 oz can black beans (rinsed and drained)
1 egg plus 2 egg whites
3 Tbsp nonfat greek yogurt
1/4 cup cocoa
pinch of salt
tsp vanilla extract
2/3 cup white sugar or (low sugar option) 1/4 cup white sugar + 1/2 cup stevia
tsp instant coffee
*optional mix-ins* walnuts, chocolate chips, etc.
 
Directions:
1.) Preheat oven to 350 degrees and lightly spray an 8x8 pan
2.) Dump all ingredients (except for optional mix-ins) into a blender and blend until completely smooth; stir in any optional mix-ins
3.)  Pour brownie batter into sprayed dish and bake for approximately 25 minutes
