Slow Cooker Gingerbread Spoon Cake
This dessert SCREAMS Christmas but you will love it so much that you will be craving it YEAR ROUND, I promise!!! It is so easy to make yet has a decadent feel. But the best part is the warm,gooey sauce that collects under the cake as it cooks. You won't see it until you scoop out the first serving, like a delicious surprise just waiting to spill out from under the unbelievably moist cake layer!! This will be a new Christmas Tradition from here on out!!!!
Ingredients:
14 1/2 oz package of Gingerbread mix
1/2 cup of milk
1/2 cup of raisins
2 cups water
1/2 cup brown sugar
1/2 cup butter
Directions:
1.) Lightly coat the inside of your slow cooker with nonstick spray; in a medium bowl, combine gingerbread mix, milk and raisins until combined (batter will be thick); spread batter evenly on the bottom of your slow cooker.
2.) In a medium sauce pan, combine water, butter and brown sugar and bring to a boil; reduce heat and let boil gently for approximately 2 minutes; carefully pour sugar mixture over batter.
3.) Cover and cook on high only for 2 hours; serve warm with scoop of vanilla frozen yogurt and drizzle with gooey sauce hidden under cake.
