Whole Grain "Country Girl" Peach Cobbler



I try to save decadent splurges for special occasions and holidays so I HAVE to have a few good light desserts to satisfy my sweet tooth from time to time.  This is a great, light dessert that will curb your cravings without getting you out of your healthy routine.  And it's easy enough to whip up on a school night!  I hope you enjoy it!


 

Ingredients:
1/4 cup whole wheat flour
1 tsp baking powder
1/8 tsp salt
1/4 cup of skim milk
2 Tbsp packed brown sugar
1 Tbsp non-fat plain Greek yogurt
21 oz can peach pie filling
Cinnamon
sweetener (optional)
White sparkling sugar (optional)

Directions:
Preheat oven to 375 degrees and lightly spray baking dish
Whisk dry ingredients together making sure to break up any lumps
Mix in milk and yogurt
Pour can of peach pie filling in dish and sprinkle with cinnamon and sweetener ( optional)
Carefully pour your batter over peaches until fully covered and sprinkle with sparkling sugar
Bake at 375 for 30 minutes or until top is golden.
Serve with a scoop of vanilla frozen yogurt or whipped cream ( as pictured)
