Ooh La La!!! Low Fat French Crepes




Who likes Crepes?.....Oui do, Oui do!!!

This easy and low fat dessert is sure make your friends and family say "Merci beau coup!!"
Even my little mademoiselle, Kennedy ("Fancy Nancy" incarnate) was so impressed she gave this simple Parisian treat a "magnifique"!!!   So what are you waiting for?.....Let's get fancy!!  
"Au Revoir"!!!

Ingredients

Crepes:
 1 Cup flour
1 tsp sugar
1/4 tsp salt
2 eggs
3/4 cup skim milk
1/4 cup water
1 tsp Greek yogurt


Cream filling:
1 pkg. French vanilla instant pudding
 (try sugar free for a healthier version that's just as tasty!!!)
1 cup skim milk
1/2 container of fat free cool whip
1 tbsp fat free Greek yogurt
Mini semi-sweet chocolate chips

To assemble:

Sift first three ingredients in a medium size bowl.  In a separate small bowl, mix eggs, milk, water and yogurt.  Whisk liquid mixture into flour mixture making sure there are no lumps. ( batter will be thin and runny)  Pour batter into lightly greased pan rotating pan to make a very thin pancake.  When bottom side begins to golden, carefully flip and cook other side.  Fill with cream filling and serve seam side down , lightly dusted with powdered sugar.

Serve as is or top with desired sauce or toppings!
Variations:
Sliced Strawberries and strawberry sauce
Fresh blueberries with blueberry sauce
Chocolate syrup
